Laboratory demonstrations of emulsion stability
In laboratory demonstrations, several emulsions based on sunflower and soybean oil were stabilised with different Borregaard biopolymers.
After preparing the emulsions, they were stored at 40°C for up to 3 months, and the average droplet sizes recorded regularly. Storage conditions were demanding. The emulsions were allowed to cream, and between each measurement, a relatively dense-packed cream layer formed.
